Lavender (Dried)
Lavender is an incredibly versatile herb for cooking. In today's upscale restaurants, dried edible flowers are making a comeback as enhancements to both the flavor and appearance of food. Lavender can be substituted for rosemary in many bread recipes, the flower can be put in sugar and sealed tightly for a couple of weeks infusing the taste of ordinary sugar and used in a cakes, buns or custards. The lavender flowers adds a beautiful colour and flavour to salads, ice-creams and in savoury dishes such as hearty stews and wine-reduced sauces.
