Curry leaves offer a wonderful scent and flavour that is slightly lemony and faintly bitter and are used extensively in Asian cooking. Despite their name, they are not related to curry powder, yet are essential in some Indian curries purely for their complimenting tastes. They also add great flavour to a range of delicious soups, stews, sauces and chutneys when simmered, quite similar to bay leaves in the way that they are removed before eating.
