Gluten Wheat Flour contains a protein found in the wheat itself that adds stickiness and sponginess to dough.
Gluten Wheat Flour has been treated so that the wheat bran and starch acids are removed, meaning it is much lower in carbohydrates, and much higher in protein.
This is an excellent product and is used predominately in baking breads and certified desserts.
