Description

Citrus peel is collected after juice extraction, shave, diced and then cured in brining vats.  It is then de-brined, cooked, washed and candied in hot sugar syrup.

  • Colour
    Mixed orange, yellow, cream with seasonal variation
  • Odour
    Characteristic, free from off or objectionable flavours, should not have an after taste or an artificial taste
  • Texture
    Should be uniform, firm, flexible, loose diced citrus peel.
